			<content:encoded><![CDATA[<p>Ah, baking is so much fun!  I have been baking up a storm thanks to our annual Christmas party coming up, and I am so excited for people to come enjoy all of the wonderful treats that I have prepared.  I&#8217;m talking about dozens and dozens of cookies, pies, cakes, cake pops, and of course cupcakes.  There are so many yummy treats in my house it&#8217;s a wonder I am still able to fit in my clothes with all the nibbling I&#8217;m doing.  All of these treats are ready to be eaten, and they certainly will be.</p>
<p>This year I did have to get a little creative with some of my goodies though.  You see, some of our friends have recently decided to live a vegan lifestyle.  That does not bother me one bit, but (eek!) how do you bake for vegans?  Thank goodness for the old Google machine because without it, the friends might have had to skip out on the tastiness that I created.</p>
<p>I found an infographic from Peta that helped tremendously with my questions, and no it is not graphic.  It&#8217;s actually kind of cute and makes me want to consider the lifestyle for myself.  So if you have any vegan friends or just want to know substitutions and such to make any recipe vegan, here you go!</p>

<p>Perhaps I misspoke.  After all, cupcakes are not the worst thing in the world.  A tripple cheeseburger with four slices of cheese, chili, mayonnaise and other dreadful toppings including bacon or sliced butter, for instance, would be far worse.</p>

<p>So, how related is the American Cupcake Obsession to celebrity participation in it?  Probably pretty close, according to some analysts.  We are affected by what pop icons do, and if they catch onto something and then begin practicing it themselves, soon enough we&#8217;ve got ourselves a full blown escapade.  That&#8217;s how celebrity works.  What is coming next?  (I&#8217;m rooting for a New Pizza Obession, or something involving eclairs&#8230;.)  Still, only Hollywood seems to know what they will latch onto in the future.  Hungry yet?</p>

			<content:encoded><![CDATA[<p>It seems like the end of October is almost here, and I have already been getting my fill of delicious Halloween candies and cupcakes.  The other day our church held a Fall Festival and I helped plan the kids&#8217; cupcake walk.  Some of the cupcakes brought in were so cute.  Bugs, ghosts, pumpkins, and mummies topped off the cupcakes that were individually wrapped for the little ones playing in the cupcake walk.  With that large assortment of ideas, I wanted to share some fun ideas for cupcakes with you all, and I figured I could even give you instructions for the cupcake walk for kids. Or, for the adults add some <a href="http://hotsauceplanet.com">hot stuff</a>!</p>
<p>Cupcake Walk</p>
<ul>
<li>Now, you have probably seen a cake walk where it is like a game of musical chairs and whoever is left standing when the music is turned off is out.  Well, the cupcake walk is a great way to let all the kids have a chance to win.</li>
<li>You will need 10 paper plates, 20 animal pictures printed from online (10 animals, two copies of each), a glue stick, and scissors.  Glue one set of the animals to the paper plates and cut out the copies to go into a hat or bucket for you to pick out of.</li>
<li>To play the game, arrange the plates in a circle on the ground.  Play music.  When the music stops the kids stop at the plate where they landed.  Draw an animal image from the bucket and call out the animal type.  Whoever is at that animal wins!  You can either put aside the drawn image and pick up the plate or let a child join in the fun.  It&#8217;s easy and kids love it.</li>

<p>Let&#8217;s face it, cupcakes are not the healthiest things for us to chow down on.  Now, they are not the most unhealthy either, but anytime I find a tasty looking recipe that is a little bit healthier than usual I get excited.  So I must tell you how very excited I was to find a recipe for cupcakes that use shredded apple to take place of some of the oil.  Honestly I did not just come across this recipe though, I was researching some healthy alternatives for my father.  Unfortunately he just had <a href="http://www.heartbypass.org">coronary artery bypass surgery</a>, and he has to start eating healthier, even when it comes to sweets.  The whole family enjoyed these tasty cakes, and they are perfect for fall.  I hope you like them too.  Here is my recipe for Apple Spice and Marshmallow Cupcakes which was adapted from EatingWell&#8217;s version.</div>

<p>1 teaspoon ground cinnamon, divided</p>
<p>1/3 cup canola oil</p>
<p>2 large eggs</p>
<p>1 teaspoon vanilla extract</p>
<p>3/4 cup whole wheat pastry flour</p>
<p>3/4 cup cake flour</p>
<p>3/4 teaspoon baking soda</p>
<p>1/4 teaspoon salt</p>
<p>1/2 cup nonfat buttermilk</p>
<p><em><strong>Frosting</strong></em></p>
<p>1 cup light brown sugar</p>
<p>1/4 cup water</p>
<p>4 teaspoons dried egg whites, reconstituted to directions on package</p>
<p>1/4 teaspoon cream of tarter</p>
<p>pinch of salt</p>
<p>1 teaspoon vanilla extract</p>
<p>1/2 teaspoon ground cinnamon</p>

<p><strong><em>Cupcakes</em></strong></p>
<ol>
<li>-Preheat the oven to 350° and line your 12 muffin cups with liners.</li>
<li>-In a bowl combine both apples and 3 tablespoons of brown sugar and 1/3 teaspoon of cinnamon and set it to the side.</li>
<li>-In a large sized mixing bowl, beat the oil and brown sugar on a medium speed until completely combined.  Next beat in each egg one at a time.  Add the vanilla in and mix on high for about a minute.</li>
<li>-Combine the dry ingredients of whole wheat flour, cake flour, baking soda, salt, and cinnamon in a bowl.</li>
<li>-Leave the mixer on a low speed and alternate adding in the dry ingredients and buttermilk into the batter.  Start with the dry ingredients and end with them too.  Then add in the apple mixture and combine.</li>
<li>-Add the batter to the cupcake cups.  They will be full.</li>
<li>-Bake the cupcakes for 20-23 minutes or until a toothpick comes out clean once entered into the center of the cake.  Let cool for an hour prior to serving.</li>
</ol>
<p><strong><em>Frosting</em></strong></p>
<ol>
<li>-Allow for two inches of water to come to a bowl in a double boiler.</li>
<li>-In top of the double boiler mix 1 cup of brown sugar and 1/4 cup of water.  Heat it over the water and stir until the brown sugar dissolves.</li>
<li>-Add the reconstituted egg whites, the cream of tarter, and salt.</li>
<li>-Beat with a mixer until it becomes thick and shiny looking, about 6 minutes.</li>
<li>-Remove the top pan from theheat source and beat for an additional minute.</li>
<li>-Beat in the vanilla and cinnamon on a low speed.</li>
<li>-Frost the cupcakes and sprinkle with cinnamon.</div>

			<content:encoded><![CDATA[<p>Instead of writing out a recipe this week, I decided to post a how-to video for you instead.  This is one of my favorite recipes especially for events that are centered around children.  What kind of kid does not love cupcakes, and secondly, what kind of kid would not want a cupcake in an ice cream cone?  That is what I thought, there are not many kids who could turn such a thing down.  These cupcakes are adorable, tasty, and fun.  With all that said I had to try them out.</p>
<p>My niece&#8217;s fifth birthday party happened to be over the weekend while the whole family was at the beach, and I figured that we could all celebrate with cupcake cones.  I was right.  They were a hit and all of the family wanted to know how I had made these treats.  I used the video that you see below, and I found that they are surprisingly very easy to create. <div id="cspc-header">Summertime, strawberries, and cupcakes, the tri-fecta of summer goodness.  Really thought there are few things that happen to be more enjoyable than eating some fresh and oh so delicious strawberries on a hot summer&#8217;s day, unless those strawberries were on a tasty cupcake, of course.  My husband and I finally got to take our trip to the lake with friends (last time we didn&#8217;t even get thirty minutes down the road before our <a href="http://www.safefromthestart.org">home security alarm systems</a> went off forcing us to go back home).  Anyways, for our fun in the sun summer lake trip I thought that strawberry cupcakes would definitely be the perfect treat for us to enjoy.  I am a huge fan of strawberry shortcake, but it is just too plain tough to eat sometimes and far less portable than a cupcake.  So, I found a couple different recipes for strawberry cupcakes that are designed after a strawberry shortcake and I created my own from the three to get this yummy version that I think you will enjoy just as much as we did at the lake.</p>
<p>Did I mention that these cupcakes are super easy to make too?  You know I love easy!  You pretty much just bake your favorite vanilla cupcake recipe&#8211;I include mine for you to use, if you&#8217;d like.  Then you will cut out, from the top, a shallow cone formed piece from each cupcake.  Fill the shallow holes with  a strawberry gelee and top it off with a thin piece from what you cut out.  Ice it with the yummy frosting and VOILA!   This recipe makes 12 cupcakes.</p>

<h3>Ingredients</h3>
<h4>Cupcakes:</h4>
<p>3/4 c Self Rising Flour</p>
<p>3/4 c All Purpose Flour</p>
<p>1/2 c Unsalted Butter, Softened</p>
<p>1 c Sugar</p>
<p>2 Large Eggs, Room Temperature</p>
<p>1/2 c Milk</p>
<p>1/2 tsp. Vanilla Extract</p>
<h4>Gelee:</h4>
<p>1 c Strawberries, Chopped</p>
<p>3 tablespoons Water</p>
<p>1/4 c Sugar</p>
<p>1 1/2 tsp. Powdered Gelatin, Unflavored</p>
<h4>Icing:</h4>
<p>1/4 c Butter, Softened</p>
<p>8 oz. Mascarpone, Room Temperature</p>
<p>1/2 Pureed Strwaberries</p>
<p>2 tablespoons strawberry jam</p>
<p>5 c Powdered Sugar</p>

<h3>Directions</h3>
<h4>Cupcakes:</h4>
<p>Line a 12 cup muffin pan with cupcake liners.  Combine the flours in a small bowl and set it aside.  In a large bowl cream the butter until it is smoothed on a medium speed.  Add in the sugar until it becomes fluffy.  One at a time, add in the eggs, beating it well after each.  Add to it the dry ingredients in three different parts, alternating in between with the milk and vanilla.  Do not over beat the mixture, but new ensure that each addition is combined.  Spoon the batter into the cupcake liners until liner is about 3/4 full.  Bake the cupcake for 20 minutes.  Let the cupcakes cook for 15 minutes, then remove and let them cool completely on wire rack.</p>
<h4>Gelee:</h4>
<p>Evenly spread the gelatin over the water.  Simmer the strawberries and sugar in a saucepan until the sugar dissolves.  Stir the gelatin and water mixture into the strawberries until the gelatin dissolves.  Remove it from the hear and allow it to cool.  </p>
<h4>Icing:</h4>
<p>With an electric mixture cream the butter and mascarpone for around 2 minutes until it is fluffed.  Next add in the jam and the strawberries and combine.  Add the powdered sugar one cup each time until you reach the texture that you want.</p>

			<content:encoded><![CDATA[<p>I cannot find anything that attracts my attention at the grocery store more than cupcakes.  It&#8217;s like I have cupcake radar and my eyes immediately dart to the nearest cutely-shaped and sweetly decorated cakey treat around.  Oh it is bad.  While store bought and bakery purchased cupcakes are fun and tasty, I feel like for me I need the whole cupcake experience.  That means, I do the baking, the decorating, and the most important part, the eating.  I have baked (and eaten) so many cupcakes that it may be scary to some people, especially really thin and healthy people who wouldn&#8217;t dare look at a cupcake much less (GASP!) eat one.  Well, here is my cupcake recipe of the week.  Make some for yourself, you are sure to love them!  Enjoy!</p>
<p>Two-fer Vanilla Cupcakes</p>
<p>If you haven&#8217;t already noticed, I&#8217;m a glutton when it comes to delicious desserts.  So, when I am in need of a serious cupcake fix, I lack the self control to not down a whole batch, so my new favorite recipe is one I have dubbed a two-fer, it&#8217;s two cupcakes from one recipe.  A two-for-0ne, &#8220;two-fer.&#8221;</p>
<p>Cake Ingredients:                                                         White Buttercream Icing Ingredients:</p>
<p>1 egg white                                                                    1/2 stick of butter, room temperature</p>
<p>2 Tbs sugar                                                                    1 1/4 c. powdered sugar</p>
<p>2 Tbs melted butter                                                        1/2 tsp vanilla extract</p>
<p>1 tsp vanilla                                                                    2 oz. melted white chocolate</p>
<p>1/4 c. flour                                                                      1/2 &#8211; 1 tsp milk</p>
<p>1/4 tsp baking powder</p>
<p>1 1/2 Tbs milk</p>
<p>dash of salt</p>
<p>Directions &#8211; Cupcakes:</p>
<p>Preheat your oven to 350° and line your cupcake pan with 2 cupcake liners.</p>
<p>Add the egg white and sugar together in a bowl, and whisk until combined.  Stir in the melted butter and vanilla and mix.  Add baking powder, flour, and pinch of salt and stir together until it is smooth.  Stir in the milk.  Split up the batter equally between both of the cupcake liners.</p>
<p>Bake the cupcakes at 350° for about 10 minutes or until the cake has completely set.  Let them both cool, and then frost.</p>
<p>Directions &#8211; Frosting</p>
<p>Use an electric mixer and cream the butter until it is just fluffy.  Add in the vanilla extract.  Very slowly add in the powdered sugar, doing so 1/4 c. at a time mixing on a low speed.  Beat in the melted white chocolate, and to get to the right consistency, add in milk 1/2 tsp at a time.  If it is too liquid, then add more sugar.  If not enough liquid, add in milk.</p>
<p>This recipe is not only super easy and the perfect portion, but it tastes oh so good!  It is the perfect pick me up to the end of a day, and my husband and I love these.</p>
